Organic Beef And Broccoli

Beef And BroccoliUse all organic ingredients:

  • 2 Broccoli heads separated into florets
  • 2 lbs. flank steak sliced thinly
  • 3 tbs. chopped fresh ginger
  • 3 tbs chopped fresh garlic
  • 1 chopped brown onion
  • 1/2 cup slivered carrots
  • 1/2 cup celery
  • 1/4 cup soy sauce
  • 1 tbs. garlic powder
  • 1/4 cup sesame oil
  • 10 fresh raw water chestnuts peeled and sliced
  • 2 tbs. tapioca starch stirred into 1 cup cold water

Add sesame oil, soy sauce and flank steak to pan cook for about 15 minutes on medium heat. Pour 1 - 2 cups water into the pan and add the rest of the ingredients (except for the water chestnuts, broccoli and tapioca starch with cold water) Heat to boiling and then turn down to simmer, add broccoli florets and water chestnuts, cook 5 - 10 minutes until broccoli is tender, but still bright green. Pour tapioca mix into pan, stir gently and serve with white rice.

Honey Baked Mustard Turkey With Breadcrumbs Chestnut Stuffing

My mom always made her stuffing the evening before. She washed down her turkey and salted it and buttered it, and I mean she buttered that baby everywhere!! She put stuffing in it and put it in the oven the night before. We always woke up to the wonderful smell of turkey cooking. She would slow cook it all night long (she always got one of the biggest turkeys she could find) She had this Roaster Set with tons of gadgets of some silver colored, very heavy metal. It had a rack and a double lid. As a kid it looked totally cool and awesome. I remember she would put water down in the bottom with all the different gadgets and stick it in the oven. Then when we were all just about dying from hunger from the smell she would take the lid off and brown it. Her turkey’s were always so tender and juicy and so delicious. I wonder if it had something to do with that awesome roaster/gadget/steamer double lidded cooking thingamajig?

Berry SmoothieAll ingredients are organic:

  • 1 egg
  • 2 tsp butter
  • 1 tbs milk
  • 1 individual serving string cheese
  • 1 green onion
  • 1 small tomato
  • 1/2 small cucumber sliced thin
  • 1 slice whole grain bread
  • 1/4 cup blueberries
  • 1/4 cup strawberries
  • 1 cup unsweetened soy milk
  • 2 tbs. coffee
  • 3/4 cup spring or reverse osmosis water
  • 3/4 cup vanilla soy milk

Chinese Rice

BeansproutsUse all organic ingredients: (try a local Asian market for some of these ingredients)

  • 4 Cups cooked brown organic rice
  • 1 can water chestnuts (fresh if you can find them)
  • 1 can bamboo shoots (fresh if you can find them)
  • 1 bag fresh bean sprouts
  • 1 package white or Asian mushrooms sliced
  • 1 lb. grass fed ground beef
  • 4 stalks celery chopped
  • 1 brown onion chopped
  • 2 cups cream
  • 2 tbs. cornstarch
  • 1/4 cup soy sauce
  • topping: Toasted Chinese Noodles

Begin by browning the beef in a pan with the chopped onions and celery. Pour the rice into a large 10 x 13 casserole dish. Layer the cooked beef mixture next and top with the remaining vegetables. Pour the soy sauce over the layers evenly. Next add the cornstarch to the cream and stir until dissolved. Pour the cream mixture over the layered dish. Cook in a moderate oven until the cream thickens and the dish is hot. (half an hour to 45 minutes) Top with noodles and serve immediately.

Our Traditional Stuffing

This recipe has been around in our family for over 75 years.  We just cannot have a Thanksgiving without our Family Stuffing.  I always make extra so everyone can take some home with them for later.  This is the traditional Recipe with possible healthier organic alternatives:

  •  5 lbs. Potatoes (grated fine) skin on
  • 1 Package Mrs. Cubbisons Corn Bread Stuffing
  • 1 Pint heavy cream
  • 2 quarters of butter
  • 2 cups hard salami (ground or sliced)
  • 1 cup milk

As you grate the potatoes pour the cream and milk over them so that they do not turn brown.  Soften the butter beforehand as well.  Mix all ingredients together in a large foil pan and cover with foil.  Bake for 1 1/2 to 2 hours in a moderate oven, until potatoes are tender.  You may also use this to stuff your turkey.

Grilled Salmon With Garlic Mashed Potatoes Served Over A Bed Of Wilted Spinach

 Use all organic ingredients:

  • Wild Salmon
  • Lemon
  • Garlic Powder
  • Onion Powder
  • Cayenne Pepper
  • Ground Black Pepper
  • Salt
  • Organic Potatoes
  • One Bulb Organic Garlic
  • Butter
  • Cream
  • Bag of cleaned ready-to-eat Spinach

Boil your potatoes, skin on, until they split. While the potatoes are cooking peel and boil your bulb of garlic in a small amount of water. Peel the potatoes  under cool water and place in a bowl with a small amount of butter and cream. Add the soft boiled garlic cloves and mash. Add more cream as needed to get the right consistency. Roll the Salmon in the spices and grill it or broil it in the oven. Spread a small amount of mashed potatoes over the whole bottom of a plate.  Immediately put a handful of spinach over the hot mashed potatoes and top it with your cooked Salmon.  Squeeze lemon juice over the Salmon and serve right away.  Very delicious!  Enjoy!

Organic Chili Cheese Fries

  • 1 Can Organic Chili Beans
  • 1 Cup grated Organic Cheddar Cheese
  • 4 Large Organic Potatoes, washed and cut
  • 1/2 Cup Organic Oil (Olive, Sesame,Coconut)
  • 1/2 Cup Chopped Organic Onions

Heat oil in heavy skillet, when hot add potatoes all at once. Have a lid ready in case it splatters. Salt the potatoes and use a spatula to turn often to brown on all sides. While the potatoes are cooking place chili in separate pot, bringing to a boil and then turning it down low to let simmer. When the potatoes are done, place them on a paper towel to drain. Place potatoes on a dish, add chili, then the cheese. Top with onion, if desired. Enjoy!!

BBQ Beef

  • Organic Beef
  • Organic Tomatoes
  • Organic Garlic
  • Organic Onion
  • Organic Apricots
  • Organic Garlic Powder
  • Organic Red Pepper
  • Organic Jalapeño

Take your piece of meat and put it in a heavy pot with a good lid and start it browning, fat side down. Once it is hot, turn the flame down to low, cover and let cook two to three hours until it shreds easily with a fork. You may add water to it, if it starts to burn, but add just a small amount. A lot of the flavor will come from the meat being nice and browned.

While the meat is cooking make your BBQ sauce in a separate pot. Add all the remaining ingredients. Once it is boiling, turn it down to simmer and let it cook two to three hours, if necessary you can mash it to make it more saucy. Add more apricots, if you want a sweet sauce. Add everything to taste, if you like it spicy add extra jalapeños. Once the meat is ready pour the sauce into the meat pot and stir well, Be sure to scrape the bottom so that all the meat flavor comes up into the sauce. Have organic whole grain buns ready to pour your BBQ Beef  onto. You may top with your favorite organic cheese. Serve with organic corn on the cob. Delicious!

Homemade Organic Hummus

I tried hummus while I was in Scottsdale, AZ and I loved it. Here is my version of it.

  • 1 can organic garbanzo beans
  • 1 organic lime - juiced
  • 2 tbs organic extra virgin olive oil
  • 2 cloves garlic
  • 2 tbs onion
  • 1 tsp garlic powder
  • salt and pepper to taste
  • pita pockets

Drain the garbanzo beans and reserve the liquid. Put all the ingredients in the food processor except for the pita pockets. You may add lime zest if you like and add the garbanzo bean juice as needed to bring the hummus to a nice dipping consistency. The Pita pockets need to be toasted. Tear a piece off the pita bread and dip into the hummus. Yummy and so good for you.
